STudies on the Mechanism of the Autoxidation of Unsaturated Fatty Acid Esters.

Abstract

The basic reactions of autoxidation were studied in an effort to obtain additional information about the structure and decomposition of the peroxides as well as the products of such decomposition. Summaries are presented of research into: (1) evidence for hydroperoxide formation with Me linolenate; (2) products of thelipoxidase catalyzed oxidation of NA linoleate and Na linolenate; (3) kinetics of the decomposition of peroxides of autoxidized Me oleate and Me linoleate; (4) photochemical oxidation of Me linoleate and Me oleate with and without chlorophyll; and (5) the kinetics of the photochemical oxidation of fatty acid esters with chlorophyll. UV and IR spectra are presented of some of the peroxide products. The isolation of the autoxidation products of Me oleate, Me linoelaidate, and Me cis- and trans-linoleates were investigated along with a method for estimating organic peroxides.
