STUDIES OF MUSTARD OIL GLUCOSIDES (2)

Abstract

Part 1 is an analytical catalog of the mustard oils furnished by seeds of Brassica vegetables, including cabbages, turnips, mustards and their allies. Part 2 describes the acceleration by Vitamin C of the enzymatic release of mustard oils from their glucosides and covers enzyme purification, the effects of chemical modification of the vitamin and the reaction mechanism.
