LITERATURE SURVEY OF VIRUSES AND RICKETTSIA IN FOODS
Abstract
This report is the first known comprehensive review of those viruses and rickettsiae which may contaminate food and which may subsequently initiate infection in man. There are 10 viruses and 1 rickettsia which have this capability. Milk is the most frequent vehicle for virus infection in man. The total inactivation dose recommended is 5x10 to the 6th power roentgens for all viruses except infectious hepatitis. For this virus a dose of 2x10 to the 7th power roentgens is recommended.
