A STUDY OF THE MICROBIOLOGY OF SELECTED DEHYDRATED FOOD PRODUCTS

Abstract

Progress is reported on a bacteriological survey of 35 dehydrated foods. The following microbial groups are enumerated: (1) total aerobic (2) coliform (3) anaerobic spores and (4) Salmonella. In addition, the prefreezing, freezing and drying effects on survival of five microbial types are discussed.
