NUTRITION SURVEY OF A COMPANY MESS, FORT SHERIDAN, ILLINOIS, 9-13 AND 23-27 JUNE 1952,

Abstract

The object of the study was to evaluate the adequacy of the diet served at a company mess, to devise and study methods for accurate sampling and chemical analysis of the food offered, and the plate, kitchen, fat, and preparation wastes; to compare the data on food consumption as determined by chemical analysis with those obtained by inventory, using the 'short' and 'long' methods of calculation; and to determine the adequacy of the tables used in calculation of the nutrient content of the Master Menu.
