STRUCTURAL-MECHANICAL PROPERTIES OF STARCH PASTES

Abstract

The relationship between deformation and shift-stress in starch paste is studied. It is shown that the limit of elasticity depends on concentration of starch in a paste, on thermal processing and mechanical dispersion.
