BIOCHEMISTRY AND THE FOOD INDUSTRY,

Abstract

A description of the use of irradiation to inhibit the biochemical processes in stored grain, sugar beets, potatoes, etc. The effect of forced ventilation on potato storage is mentioned. The use of ferments made from fungi for processing sugar-beet and brewery wastes into vitamin B12 concentrates is discussed. The advantages of using vitamins, antibiotics, and amino acids are illustrated graphically. (Author)
