EVALUATION OF MECHANICAL MEAT TENDERIZER.

Abstract

The purpose of this study was to evaluate a meat tenderizing machine which utilizes the principle of cutting the tough fibers of a meat into short lengths but at the same time knitting them into flat steak-like pieces of meat that can be handled easily.
