EVALUATION OF TYPE 23 FRYER MANUFACTURED BY ASSOCIATED PRODUCTS, INC.,

Abstract

The performance of a Type 23 deep-fat fryer was evaluated. The Type 23 fryer, as represented by the sample evaluated, is not satisfactory for Navy shipboard use as it was found to be unsuitable for food preparation under design conditions. Numerous design and construction modifications are required to improve operating conditions and maintenance as well as to meet the sanitary standards of the U. S. Public Health Service. The design of a satisfactory fryer based on a production of 23 pounds of potatoes per hour is considered feasible. (Author)
