COMPARATIVE STUDY OF DRY MILK SOLIDS FOR NAVY FEEDING.
Abstract
Based upon studies conducted among Naval personnel, it was established that a single type of dry milk solids is satisfactory for service use. When used for a milk beverage, low-heat nonfat dry milk solids had the greatest acceptability of any dried milk product. Moreover, the performance of the low-heat nonfat solids with a preheat treatment of 160 to 170 F for 20 to 30 minutes was entirely adequate for cooking and baking.
