THE ACCEPTABILITY OF FROZEN COFFEE CONCENTRATES. THE EFFICIENCY OF A NEWLY DEVELOPED UNIT FOR DISPENSING LIQUID COFFEE CONCENTRATES.

Abstract

As a control, regular issue Navy coffee was used in some of the investigations. This coffee is received at this activity in 50-lb. bags. It is not considered a high quality product since there is about a six-month's lapse of time from the date of roasting and grinding to date of delivery at this facility. This must be remembered in evaluating the results of this study. The three samples used during this study were for the most part dispensed from a special machine designed to dispense a liquid coffee concentrate with hot water. This machine dispenses about 5 cc of concentrate to approximately 6 oz. of water. Temperatures of all coffee at service was approximately 185F. Evaporated milk or cream and sugar were used in certain tests and omitted in others; mention is made in the individual study when used.
