Investigations on Freezing and Freeze-Drying of Selected Fruits and Vegetables

Abstract

Investigations were made on the mode of invasion of fruit and vegetable tissue by ice and the changes produced by freezing and thawing and freeze-drying of the tissues as well as rehydration evaluations. In general three methods of exploring the effects of freezing and freeze-drying were used. (1) Direct observation of thin sections of fresh tissue under a cryomicroscope during freezing and thawing. (2) Observations of material fixed and stained after it had been freeze-dried. (3) Observations of material sectioned while in the frozen state or after freeze-drying.
