THE SPEED FIELD FEEDING SYSTEM

Abstract

The SPEED Field Feeding System consists of a company-size kitchen and a brigade-size bakery. Both units are all-electric, mobile, and completely self-contained for one day's operation. A 60-kW gas-turbine generator set, similar to the type used on commercial aircraft as an auxiliary power source, is located in each unit, and is the sole power source for the unit. Microwave ovens, with their ultra-rapid cooking characteristics, are the primary cooking sources in an 'integrated cooking' system. Also utilized are a forced hot-air convection oven and a large grill. These items of equipment work in conjunction with one another and represent a unique approach to cooking.
