The Effect of the Quality of the Raw Material on Increasing Production Capacity of Dried Fruits (Vliyanie Kachestva Syrya na Intensifikatskyu Proizvodstva Sushenykh Plodov),

Abstract

Considerable attention is given to drying fruits, because the high expense of raw material of 1 unit of finished product decreases in a period of mass production of the raw material at fruit processing industries. An increased capacity in the production of dry fruits is affected by the quality of the raw material, its preparation beforehand, the process and method of drying and other factors. The quality of the dry fruits is also determined by the quality of the initial raw material. The yield of finished product is mainly affected by the content of dryable substances in the fresh fruits and the amount of loss and waste, and for fruits with pitts also the content of pits and the coefficient of their shrinkage.
