Research on a Foam-Production Process in the Production of Dry Potato Puree (Issledovanie Protsessa Penoobrazovaniya pri Proizvodstvo Sukhogo Kartofelnogo Pyure),

Abstract

Research is being done on processing techniques of producing dried potato puree by using foam-drying. The main system of this process consists of the following basic technical operations: washing the potatoes, peeling and cutting, cooking them until done, mashing the potatoes and thinning to a puree, introducing a foam stabilizer, formation of the foam, and drying of the frothy material. The process of foam formation of potato puree is being discussed.
