Abstract
The report describes a method for evaluation of bakery equipment operational and functional performance characteristics. Applicable equipment includes a field bakery system or any of its major components: flour sifters, dough mixers, dough trough, dividers, molders, dough proofing cabinets, ovens, and bread cooling racks.
