Development of Dry Mashed Potatoes in Granule Form in Vegetable Drying Plan.

Abstract

The industrial production of dried mashed potato in granule form is established at the Gryazinsk Food Combine and at the Chernigov Vegetable Drying Factory and in flake form on the basis of the imported 'Overton' lines at the Moscow Factory for Potato and the Sol'sk Dried Vegetable Factory. An experimental production line at the Dubnovsk Combine has shown that existing factories and equipment can be used with certain additions and modifications to produce dehydrated mashed potatoes in granular forms. The new process involves a single cooking step using standard equipment with special additions to existing lines for granulating and disintegrating the potatoes. Depending on the particular steam conveyor used, production is estimated at 125-500 tons per year.
