Prospects for the Development of Foodstuff Freeze-Drying,

Abstract

Batch, continuous-cycle and continuous vacuum freeze-drying of foodstuffs is discussed. The authors anticipate eventual replacement of the batch process by continuous processes. They also believe that the use of continuous-cycle and multichamber processes, using modular construction, will be widespread in the transition period. Thermal electric heaters of the resistance and incandescent lamp types and of the slab-liquid heat transfer agent type are discussed, and electric resistance heaters is considered to be the most effective and economical.
