Storage Stability Of Dry Tomato Sauce Mix

Abstract

The purpose of this study was to evaluate three methods of packaging dehydrated tomato sauce mix in comparison with a commercial packaged product, Dehydrated tomato sauce mix with desiccant (CaO) packets was packaged in 401 x 411 cans in which the internal atmosphere was maintained as follows: nitrogen (containing less than 2 perecent residual oxygen), or air or vacuum-26.7 kPa pressure (22 inches Hg gauge); the commercial product also used this latter (vacuum packaged) atmosphere.
