Freezing of prepared foods in central kitchens, rapid reconstitution devices for serving food, packaging for food service systems, and costs and improvements realized from utilizing such systems are considered. These technologies and systems are discussed in relation to military feeding whenever possible. The study is divided into two sections: Free world countries, comprising the United Kingdom, Sweden, West Germany, Japan, Australia, and South Africa; and Communist countries, composed of the USSR, Yugoslavia, Czechoslovakia, Hungary, East Germany, and Poland. In the free world section, emphasis is placed on the present situation; discussion of the Communist countries considers the development of freezing and dehydration technologies, the present status, and probable future success in these areas.
