Food Preparation Studies
Abstract
The 42-day menu cycle was analyzed in terms of equipment required for the Central Food Preparation and Satellite Food Service Facilities. Commercial equipment that can perform the various unit processes and unit operations was listed. With few exceptions, practically all the equipment needs can be satisfied by existing designs. The exceptions were identified and conceptual designs were prepared.
