Survival of Microflora in Precooked, Frozen Meals During Frozen Storage,

Abstract

Five meals of 4 different menus of precooked frozen meals were examined for the total plate count, the fecal streptococcus count, and the yeast mold count. Duplicates of the same menus were stored at -20C for 3 months and then retested. The total plate counts after frozen storage were not significantly increased or decreased from initial total plate counts. Fecal streptococci and yeast and mold counts are given but were detected in low numbers.
