The Effect of Variety on Dehydration and Long Term Storage of Carrots ('Daucus Carota').

Abstract

Twelve carrot varieties were analysed for reducing and total sugars, carotene and solids content. Samples of certain varieties were dehydrated and stored at 1, 15 and 37 C for up to two years and subjected to taste panel testing at intervals. Browning was determined after storage at 37 C for 2 yr and found to depend markedly on moisture and reducing sugar content. Recommendations of varieties suitable for dehydration and long term storage are made. (Author)
