A Storage Study of Six Commercial Soy Protein Ingredients Combined with Ground Beef

Abstract

This study was designed to provide information for decisions on: (1) the general suitability of soy protein extenders for military use in a frozen ground beef patty vehicle, based upon various objective and subjective indices of quality over time of frozen storage; (2) the feasibility of preparing purchase specifications for ground beef premixed with these extenders; and (3) the advisability of a follow-up production engineering test to include military food service personnel and consumers.
