Examination of Patient Tray Food Service Equipment, an Evaluation of the Sweetheart Food Service Cart

Abstract

The Food Engineering Laboratory (FEL) of the U.S. Army Natick Research and Development Command (NARADCOM) is engaged in giving technical support to the Walter Reed Army Medical Center's cook-freeze food service program. As part of this support, the Sweetheart Food Service Cart was evaluated. The parameters considered dealt with the system's capability of maintaining temperatures of a preheated testing medium as well as of temperatures of chilled items. The testing medium was utilized in order to avoid introducing variations inherent in natural food products. Contained herein are the results of the above evaluations.
