Vitamin Assay Data on Food Samples Obtained from Naval Air Station, Alameda, California and Marine Corps Base, Twentynine Palms, California: Thiamin, Riboflavin and Vitamin B-6.

Abstract

Over 300 samples representing 174 food items were collected from the serving lines at the Naval Air Station, Alameda, California and the Marine Corps Base, Twentynine Palms, California. Results of thiamin, riboflavin and vitamin B-6 analyses are presented here. Most of this information is not available in the current literature. In contrast to previous reports of vitamin contents of foods, this study emphasized prepared food items on an 'as served' basis. (Author)
