An Evaluation of the New 'Multi-Restaurant' Food Service System for the Marine Corps
Abstract
This report contains an evaluation of the new 'multi-restaurant' concept designed and tested at the Marine Corps Air Ground Combat Center at Twentynine Palms, CA. The concept consists of eight outlets, three serving A- ration type meals, three serving specialty type meals (Steak, Italian, and Barbeque) and two offering short order menus such as hamburgers, hotdogs, french fries, etc. Each outlet has its own unique decor (theme) to complement the menu being offered. The results of the evaluation show significant increases in customer acceptance both from surveys and as reflected by a 30% increase in attendance, and also substantial improvement in worker attitudes towards their jobs.
