The Effects of Cereals and Legumes on Iron Availability.

Abstract

At the invitation of the INACG Secretariat, a task force of specialists from various fields met with representatives of the federal government, academia and industry to review recent research findings on the effects of cereals and legumes on iron availability. The report deals almost exclusively with human studies as it has been difficult to make extrapolations from iron absorption experiments in animals to man. (Author)
