A Systems Analysis of Army Field Bread and Bakery Requirements
Abstract
The systems analysis addresses alternatives to satisfy the Army's field bread product requirement, including fresh bread from mobile bakeries and host nation support, shelf-stable end products (canned bread, crackers, British- type biscuits), and shelf-stable mixes (cornbread, biscuit mix, sweet/quick breads). Each alternative was evaluated relative to a variety of criteria, including peace and wartime cost impacts, logistical impacts, field bakery requirements, and consumer acceptance.
