Crystallization and Vitrification in Cryoprotected Aqueous Systems.

Abstract

Some key ideas, and experimental finding concerning the probability that crystallization of a liquid or its binary solutions will occur at moderate cooling rates are discussed, with emphasis on the case of aqueous solutions. The use of cryoprotectants and of pressure to dimimish these probabilities, hence to promote vitrification, is rationalized. Some new data on crystallization of bulk and emulsified aqueous solutions of the cryoprotectant glycerol are presented to illustrate the principles.
