Food Service Production Systems for Tripler Army Medical Center, Hawaii

Abstract

This study is primarily a literature review to determine which of three general categories of food production (the Conventional System, the Convenience System, and the Cook/freeze system) would be best to include in the major renovation plans of Tripler Army Medical Center. After comparing the systems, the author applies a simple decision matrix, and determines that the 'Cook/freeze' system is best. Keywords: Health care, Food service, Food storage.
