Reduction of Added Nitrite in Corned Beef Preserved by Irradiation

Abstract

Ibis report deals with consumer acceptance of irradiation sterilized flavored ground beef patties Flavorings used were salt, garlic salt, onion salt and pepper in various combinations. Textured soy protein (TSP) was also added at a 20% level. A trained eight-member panel evaluated the products for flavor, odor, color, texture and appearance using an eight points intensity scale. The patties all received acceptable rating in the range of 5.7 to 7.1 This showed that highly acceptable, irradiation sterilized ground beef patties could be prepared for inclusion in the military feeding system.
