Freeze Dried Raw Meats.

Abstract

This patent application describes a method of producing a freeze dried raw meat product which is more easily and more completely rehydratable which is produced by expanding the matrix of the meat through the addition of water. The matrix expansion is enhanced by the addition of adjunctive hydrophilic ingredients which are incorporated in the meat to act as wicking, wetting or emulsifying agents. Following the mixing of the ingredients which equilibrate throughout the meat, the meat is frozen, then sliced and finally freeze vacuum dehydrated to a predetermined moisture level.
